Grilled Fish Marinade
  • 1/2 sliced yellow onions
  • 1/4 cup olive oil
  • 2 Tablespoon orange juice
  • 2 Tablespoon lime juice
  • 2 Tablespoon fresh cilantro
  • 5 cloves garlic, smashed
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • Pinch of cayenne
  • 24-32oz of fish fillets

In a bowl, combine the onions, oil, orange and lime juices, cliantro, garlic, salt, cumin, and cayenne. Mix together. Pour marinade over the fish, cover and refridgerate for up to 1 hour.

Preheat a grill on high. When ready oil the grill with vegetable oil. Remove the fish from the marinade and place on the grill. Slide the fish back and forth on the grill to help prevent sticking. After about 2-3 minutes turn the fish over on a new section of the grill. Again sliding back and forth to prevent sticking. Moving to a new section of the grill also helps with sticking. Give another 2-3 minutes.

Serve withyour favorite side.

This recipe was found online here on the Food Network site. The recipe calls for Mahi fillets but we used red and trout fillets as you can see from the picture.
